AJ’s Panang Curly


AJ’s curry is delicious. It is spicy. It can also be made spicier. (I also love Ivory Hut’s Curry Recipe  )
Anyway, here is what we did.

Serves 2.5, Prep 10-15 mins Cook until chicken is cooked (time may very depending on the size of your pieces)

2 Tablespoons of Olive Oil
1 can of Panang Curry Paste
2.5 cups of Coconut milk
1 teaspoon of beef broth (or chicken broth)
2 Chicken breasts (de-boned and chopped up into strips) (or tofu for veggies)
Rice
Lime
(optional)
Half a red pepper (or a sweet pepper)
Tofu
Broccoli
What ever else you like in your curry.

Prepare your chicken. De-bone, slice, wash in lime juice, whatever. Do what you gotta do.
Heat olive oil in a deep frying pan. Add curry paste. Stir it around, cook it all up. Add 1 and 1/4 cups of coconut milk (slowly). stir it all up. Mix it all together. Add the broth. Mix it all up.
Get your rice ready.
Add chicken and peppers to curry. Then add the rest of the coconut milk. Then let that shit cook.
When rice and chicken are cooked, plate. and garnish with a pretty lime. Like ours. Then eat it all up! NOM NOM NOM.
